"I've learnt all sorts of things on my travels. One of my favourite dishes that I've brought back from Ireland for years is slow-roasted lamb shank. So I thought I'd offer it to you to try. We roast the shanks, marinated in root vegetables and red wine, until the meat is, as they say, tender.
